The pink eyes thing has to be a mistake, right? Pink eyes DO occur in people with albinism, but it's incredibly rare.
I'm inclined to think it's a mistake because he was fully skeletal, so it doesn't sound like he had eyes at all at that point.

Assuming the description of the UID having "pink eyes" is correct (which I don't think it is as I'm not sure how they could determine eye color from skeletal remains), Valentín Flores Flores could be a match.

Although I think it is far more likely Valentín Flores Flores perished in the desert of Arizona, he is described as having a medical condition that makes the whites of his eyes appear pink and is otherwise within the UID's height and age range.
