Did a breakfast food prep this morning. I bought a pack of rolls for ham sandwiches, non gluten free. Since only my girls need GF and they're not visiting, I decided I'd make breakfast sandwiches to use them up. The church had given me medium sized eggs, not large which I need for baking. So I needed to use those up too.
I sliced up some medium cheddar, layered some ham pieces, spinach, a cooked egg, and dash of pepper, after spreading the rolls with mustard. I put 2 toothpicks in to keep them upright. I ate one immediately and it dawned on me I should have toasted it in my toaster oven. I will do that for the next 2 breakfasts. They turned out quite tasty. And only need to clean up once!
