Food and Recipes while under Coronavirus quarantine #8

I don’t usually purchase ready made meals but this polenta and roasted vegetables entree from Costco looked too good to pass up.

It was excellent! I am sure it is a limited time offering, probably only through Thanksgiving, but it is something I would purchase frequently if it was available.
I was looking for an ingredient list for this and came across several rave reviews for the new Costco entree. Seems that a lot of folks have tried it and absolutely love it! I love polenta and roasted vegetables but have never had them combined. I added the prepared entree to our Costco list but would still like to know what the ingredients are and if it would be simple enough to make. So far, this is all I could find: The popular new offering is an herb-based parmesan polenta topped with roasted sweet potatoes, mushrooms, parsnips, bell peppers, broccoli, purple potatoes and parmesan cheese.

This looks like a dish (minus the mushrooms) that we could all eat. I’ll have to see if there’s a recipe online that would be similar.

I would love to have the recipe if you find one.
So far, I like this one. Not a huge fan of eggplant but it sounds delicious. Once assembled I doubt it would have a strong eggplant flavor anyway. It seems you could use any veggies. One I read had asparagus and carrots. But we could easily customize it for our food allergies.

 
I just bought another one to take to a friend’s house for dinner.
Thank you for sharing the "official" ingredient list. Way too much dairy for me, so I'll remove the entree from our Costco list. I was thinking that I could cook polenta and serve ratatouille over it. Never thought of it before, but I'm sure the combination would be delicious.
 
I just came back from Tampa, where we ate a Longhorn Steak House for the first time. I had their Strawberry & Pecan salad and it was the best salad I've ever had, lol. I keep thinking about it and want to go back! I tried to attach a pic from their menu but it's not loading.

Here is the description:
Farm fresh field greens topped with fresh cut strawberries, grapes, mandarin .oranges, candied pecans, and feta. Served with a light raspberry vinaigrette.
Thank you for recommending Longhorn Steak House. After your description of the strawberry salad, I looked it up and found a photo. We had never been to a Longhorn and went tonight. I got that wonderful salad that also had grilled chicken on it and it was delicious….we will be going back.

I often go to Longhorn when I am traveling. Their food is very good and they do a nice job packaging carry out orders, I often take meals back to my hotel.

Besides the salads, their baked potatoes are always very good, and so is the salmon.

That sounds like it would have been a flatbread but they did it on top of polenta instead. That sounds yummy. (LUV polenta) I'd opt out on the sweet potatoes but that's just me.

Now I want polenta as a T-giving side, but my list is already gone over the cliff w/too many things and I know a lot of them are never gonna get made. We're keeping the spinach salad and switching out on the other app to like a banger cocktail meatball (love bangers). I just made a test batch now and we had it with the gravy making gravy bread and the meatballs. For sides, dressing/stuffing, mash, mac n cheese, creamed spinach, succotash, brussels & bacon, glazed carrots, creamed pearl onions, pasta salad and I want now to add collard greens and turkey yorkshire puddings, but I know at least two of those sides on the list won't materialize, LOL. Dessert won't be a problem because I can make it ahead of time. The meatballs, too, I think I'll do slow cooker. I think the mac n cheese and pasta salad will probably be the ones I drop off.
 
I made breakfast casserole this morning. No spinach this time. My oldest (taking care of me) isn’t wild about cooked spinach.

First layer or “crust” was flat tater tots “crowns” from Ore Ida. I laid them flat in the 9” x 13” baking dish. Sprayed the dish beforehand.

I sautéed 1/2 an onion & 2 tablespoons of minced garlic. I sat that aside and cooked the ground turkey sausage. I only used 1/2 lb of it. Diced & seeded 1 large tomato. Used 14 eggs. 2 cups of grated Colby Jack cheese. I forgot to add salt & pepper.

Mixed all that together. Poured it over the tater tots. Baked at 350 deg for 45-50 min. Let it set up for 10 min.

It’s so good. We will have breakfast for days.

I’m so glad to be home. I feel like I’m finally decompressing from the stress of 5+ weeks of treatment. Tonight I made dinner. I love my little kitchen. It’s nothing fancy, perfect size for me.

Publix had pork tenderloins BOGO so we tried the new brand. It was very tender.

I cut up a sweet potato from my garden, a few red potatoes and 2 russet potatoes. Coated them with olive oil, sprinkled them with salt, pepper, onion, garlic and just a touch of rosemary. When they were almost done, I added 2 pats of butter.

I steamed yellow squash and zucchini with salt pepper onion & garlic.

I’m still not eating a lot at one time but this was very good.

Welcome home! That all looks very tasty! And it's awesome to be able to cook something you grew yourself.

We’ve served the Costco polenta with roasted vegetables twice now and all my friends think it is excellent.

I’ll definitely be trying some recipes because I know this is a limited time offering at Costco.
 

Why are we seeing so many food recalls lately? o_O

"I think the whole scenario has broken the trust of the consumer," Food scientist and food industry consultant Dr. Bryan Quoc Le previously told USA TODAY. "As a personal consumer and someone that is in this industry, I would probably tell my family members don't eat Boar's Head for at least six months, if not a year.”
The records showed 69 reports of "noncompliance" at the Jarratt, Virginia plant, including reports of insects live and dead black and green mold, as well as mildew, dripping and standing water and other unsanitary conditions within the plant in the weeks leading up to the July recall.

Later, more FSIS records were released dating back to January 2022 including reports of leaks and condescension dripping over areas with product, "sludge," "black smudges," "slimy" materials and other residues found on machines and in several rooms across the facility, "putrid," "off" odors, "thick and flaking rust" in several locations including above production lines, and dirt, screws and trash were seen strewn on the floor of production areas.
 
Four days and counting! Gotta get into the defrosting today/tomorrow. Think I'm doing a dry brine on the breast, something simple, s/p & ground ginger, I'm seriously thinking about dousing in Montreal steak seasoning for my dry brine, LOL. Love the stuff! I mean, I even love the smell of it, lol.
 
This one is “over” per Boars Head

I hope Boars Head fresh liver sausage comes back to local stores. I don't eat it often, but every so often I get a craving for liverwurst, mostly during the winter. I tried Kowalski brand and didn't care for it at all - gritty texture and too garlicky. Boars Head liverwurst is smooth and cream, almost like a mouse in texture and is not overly garlicky.
