I had a brand new S-10 (late 80's) and the engine had to be replaced after the camshaft flattened. Fortunately, it was still under warranty. I was told it was a design issue that year and the engines ran too hot. In other words, I know that Chevy engines sometimes have to be replaced whether old or new!

That hybrid fuel system drove me beserk.
To your point about the motor deal, I know that this shop owner was within a legal right to take the truck, tho I would think he would have to give notice but I’m not sure. It’s just been my experience that local car enthusiasts, mechanics, parts dealers and so on, tend to be a close group and I wonder what the shop owner may have told KS or TW? A lot of people in these circles work on “verbal” contracts which can often lead to conflict.
The mechanic would need to follow a certain legal process to assume ownership of the truck before any parts from the truck could be removed and sold. I doubt those rules were followed, so the original owner of the truck would not have changed. This page has a summary:

The Polk County Sheriff's Office said Kevin Wheeler, 45, was seen on camera taking solar lights from the grave of Damion Tillman.
This wasn't the first time something had been taken from the gravesite, so Damion's parents Roy and Elizabeth Tillman had placed a surveillance camera there, according to investigators.
Deputies said Wheeler told them he was "getting lights" and he had "an interest with gravesite lights and was removing them because he thought they were pretty.”
Investigators said they found Damion’s gravesite, along with 5 additional solar lights, were found in the bed of Wheeler’s pick-up truck.
